Zest up your Hanukkah with a healthy twist on traditional potato latkes, try making my ZCakes aka my zesty zucchini latkes!
Swap out potatoes for lean green, high-fiber, nutrient-dense zucchini. Yes, they’re fried, but they don’t have to be greasy! Just pat-a-cake, pat-a-cake with a paper towel until your ZCakes are less greasy.
INGREDIENTS:
2 Zucchinis*
1/2 Cup Unbleached Flour* (flour alternatives: almond, coconut, Tigernut flour)
2 Eggs*
1 Red Onion*
1 Teaspoon Baking Powder
1 Teaspoon Sea Salt
1/2 Teaspoon Black Pepper
Oil (Olive Oil)

SUPPLIES:
Mixing Bowl
Skillet
Soup Spoon
Grater
Spatula
Whisk
Prep Time: 20 minutes
Cooking Time: 4 minutes
Serves: around 10 3″ latkes
DIRECTIONS:
1. Grate zucchini into a large mixing bowl.
2. Dice onion and add to bowl.
3. Stir zucchini and onion together in the bowl.
4. Add in the flour, baking powder, salt, and pepper and mix.
5. Heat up skillet over medium heat and pour in 1/2 tablespoon of olive oil. When the oil is hot, lower the heat to a medium-low heat and drop in a soup spoon of batter.
6. Cook the ZCakes for around 2 minutes on each side, until brownish.
7. Put the ZCakes on a paper towel and pat dry of grease.
8. Serve ‘um up! Naked or with a dollop of organic sour cream or organic unsweetened applesauce.
FUN FACT: Frying foods in oil is symbolic of the miracle of Hanukkah ~ a 1 day supply of oil that kept the eternal flame in the Jewish Temple lit for 8 days!
